The purpose of grease traps and interceptors is to prevent grease, oils, and fats (FOG) from getting into the building and public sewer systems. Depending on the use, they may be found outside or within your kitchen. They are often made to hold onto FOG-filled effluent for a sufficient amount of time to allow the grease in the water to cool, harden, and separate from the residual trash. Grease may be appropriately disposed of once it has separated.
