Houston asks for more than a pump-out
Chapter 47 sets a calendar. Emptying happens at least every 90 days, sooner once grease and solids fill a quarter of the wetted height, and a registered pumping company does it. Separately, no more than 180 days may pass without the trap being cleaned, inspected and, where needed, repaired.

On inspection day
Houston Health Department inspectors turn up unannounced. They check the sample well, grease trap, dumpster, rendering oil bin and surrounding area. Chapter 47 puts the goal in one line: service the trap often enough that no visible fat, oil or grease shows in the sample well.
Have the paperwork ready as well. Inspectors ask for your original grease permit and the waste manifests from the past five years.
